Instructions
1. Preheat your air fryer to 320°F (160°C). This ensures even baking.
2. Prep your ingredients: Grate 1 ½ cups of fresh carrots and set aside. In a mixing bowl, combine 1 ¼ cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and ½ teaspoon salt.
3. In another bowl, beat 2 eggs. Add ⅔ cup oil and ¾ cup sugar. Mix well until combined.
4. Combine the wet and dry ingredients: Gradually add the dry mixture to the wet mixture. Stir until just combined. Avoid overmixing.
5. Fold in the grated carrots. If using, add ½ cup chopped nuts and ½ cup raisins. Mix gently to distribute evenly.
