Instructions
1. Prepare the Chicken: Lay the chicken slices flat on a cutting board. Cover them with plastic wrap and gently flatten using a meat mallet until they are about 1/4 inch thick.
2. Add Ham and Cheese: Place a slice of ham and a slice of cheese on each flattened chicken piece. Roll the chicken tightly around the ham and cheese, securing the roll with toothpicks to ensure it holds its shape.
3. Breading Station: Set up three shallow bowls for the breading process. In the first bowl, place flour seasoned with salt and pepper. In the second, beat the eggs. And in the third, mix panko breadcrumbs with paprika and garlic powder.
4. Coat the Chicken: Dip each chicken roll first in the flour, shaking off excess. Then, dip it into the beaten eggs, and finally, coat it thoroughly with the seasoned breadcrumbs.
5. Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to heat up for about 3 minutes.
6. Cook: Spray the air fryer basket with cooking spray. Place the chicken bites in the basket, making sure they do not touch for optimal airflow. Cook for 10 minutes, then carefully flip each bite and cook for an additional 5-7 minutes, or until golden and cooked through.
7. Rest: Remove the chicken bites from the air fryer and let them rest for a few minutes before removing the toothpicks. This allows the cheese to set slightly and makes them easier to serve.
