Ingredients
- 4 boneless, skinless chicken breasts
- 8 slices of prosciutto
- 8 fresh sage leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup white wine (optional, for pan sauce)
- 1/2 cup chicken broth (optional, for pan sauce)
- 1 tbsp unsalted butter (optional, for pan sauce)
Instructions
1. Prepare the chicken: Start by slicing each chicken breast in half horizontally to create thin cutlets. If needed, pound them gently with a meat mallet to an even thickness of about 1/4 inch.
2. Season the chicken: Lightly season both sides of the chicken cutlets with salt and black pepper.
3. Wrap with prosciutto and sage: Place a fresh sage leaf on each cutlet, then wrap each with a slice of prosciutto. Secure with toothpicks to keep the prosciutto in place.
4. Preheat air fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 3 minutes.
5. Arrange chicken in air fryer: Lightly brush the chicken with olive oil. Place the prepared cutlets in the air fryer basket in a single layer, making sure they do not overlap.
6. Cooking time: Cook at 400°F (200°C) for 10 minutes. After the first 5 minutes, flip the chicken using tongs to ensure even cooking.
7. Check for doneness: The chicken should be cooked to an internal temperature of 165°F (74°C). The prosciutto should be crispy.
8. Rest the chicken: Once done, remove the chicken from the air fryer and let it rest for a few minutes before serving.
Notes
For extra flavor, you can make a simple pan sauce. After cooking, deglaze a small saucepan with white wine and chicken broth, then stir in a bit of butter to create a rich sauce to drizzle over the chicken.
