Instructions
1. Preheat air fryer to 360°F (182°C) for 5 minutes. Preheating the air fryer is crucial for even cooking.
2. Rinse and dry the corned beef brisket. This removes excess salt.
3. Season corned beef by rubbing the brisket with the seasoning packet provided, or create a glaze with 1/4 cup brown sugar, 2 tablespoons Dijon mustard, and 1 tablespoon apple cider vinegar.
4. Wrap the corned beef in aluminum foil, ensuring it is tightly sealed. This helps retain moisture.
5. Place the wrapped brisket in the air fryer basket. Set the air fryer temperature to 360°F (182°C).
6. Cook for 60 minutes. This initial air fryer cooking time ensures the meat begins to tenderize.
7. Flip the brisket halfway through to ensure even cooking on both sides.
8. After 60 minutes, carefully unwrap the foil. Basting corned beef with any remaining glaze or the juices collected in the foil.
9. Cook for an additional 20 minutes to caramelize the glaze and achieve a crispy exterior.
10. Use a meat thermometer to check that the internal temperature has reached at least 145°F (63°C).

Always let the corned beef rest for 10 minutes before slicing. This allows the juices to redistribute, ensuring the meat is juicy and tender.
