  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

  • Potatoes: 2 large Russet or Yukon Gold potatoes
  • Duck Fat: 3 tablespoons, melted
  • Salt: 1 teaspoon, or to taste
  • Black Pepper: ½ teaspoon, freshly ground
  • Garlic Powder: ½ teaspoon
  • Fresh Herbs: 1 tablespoon, chopped (optional, for garnish)
  • Paprika: ½ teaspoon (optional, for extra flavor)

Potato Choices:

  • Russet Potatoes: Best for a crispy texture.
  • Yukon Gold Potatoes: Provide a creamier interior.

Instructions

1. Cut the Potatoes: Wash 2 large Russet or Yukon Gold potatoes. Cut them into ¼-inch thick fries.

2. Soak the Potatoes: Place the cut potatoes in a bowl of cold water. Soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

3. Dry the Potatoes: Drain the potatoes and pat them dry with a clean kitchen towel.

4. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes. This ensures even cooking.

5. Toss in Duck Fat and Seasoning: In a large mixing bowl, toss the dried potatoes with 3 tablespoons of melted duck fat, 1 teaspoon of salt, ½ teaspoon of black pepper, and ½ teaspoon of garlic powder.

7. Cook the Fries: Air fry at 375°F (190°C) for 15 minutes.

8. Shake the Basket: Halfway through cooking, around the 7-minute mark, shake the basket to ensure the fries cook evenly.

9. Check for Doneness: After 15 minutes, check the fries. They should be golden brown and crispy. If they need more time, cook for an additional 3-5 minutes, checking frequently.

Notes

For the crispiest fries, ensure the potatoes are completely dry before tossing them in duck fat. Soaking and drying the potatoes is crucial for the best texture.
