Instructions
1. Score the Pork Belly: Using a sharp knife, score the top of the pork belly in a crosshatch pattern.
2. Season the Pork Belly: Rub the pork belly with olive oil, then season with salt, black pepper, paprika, garlic powder, and onion powder.
3. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
4. Cook the Pork Belly: Place the pork belly pieces in a single layer in the air fryer basket. Air fry at 400°F for 25-30 minutes, flipping halfway through, until crispy and golden brown.
5. Rest and Slice: Remove the pork belly from the air fryer and let it rest for a few minutes. Slice into bite-sized pieces.
6. Heat the Tortillas: Warm the corn tortillas in a dry skillet over medium heat or microwave wrapped in a damp paper towel for 30 seconds.
7. Assemble the Tacos: Place pork belly pieces on each tortilla. Top with cabbage slaw, diced red onion, chopped cilantro, and crumbled queso fresco. Squeeze lime wedges over the top.
8. Serve: Arrange the tacos on a serving platter and enjoy immediately.
