Instructions
1. Pat the pork loin dry with paper towels to remove any moisture. This step is crucial for a nice crust.

3. In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. If using brown sugar and cayenne pepper, add those as well.
