Ingredients
- 2 large artichokes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Optional: 1/2 teaspoon paprika for a bit of heat
Instructions
1. Preheat your air fryer to 370°F (190°C) to ensure it’s ready for cooking.
2. Cut artichokes: Start by trimming the top inch off each artichoke and cutting off the stem to create a flat base.
3. Remove tough outer leaves and clean artichokes by rinsing them under cold water to remove any dirt.
4. Slice the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.
5. In a mixing bowl, prepare artichokes by coating them with olive oil, garlic powder, salt, black pepper, and lemon juice.
6. Place the seasoned artichoke halves in the air fryer basket, cut side down.
7. Set the air fryer settings to 370°F (190°C) and cook for 10 minutes.
8. After 10 minutes, flip the artichokes over and cook for another 8-10 minutes until the leaves are tender and the edges are slightly crispy.
9. Check for doneness by piercing the base with a knife; it should go in easily.
Notes
For extra crispy artichokes, you can brush them with a bit more olive oil before the final 5 minutes of cooking.
