Instructions
1. Wash the eggplant thoroughly under cold running water.
2. Slice the eggplant into rounds or strips, depending on your preference. For even cooking, keep slices about ½ inch thick.
3. Salt the eggplant slices generously and let them sit in a colander for about 30 minutes. This step helps draw out the bitterness.
4. After salting, rinse the slices with water and pat them dry with paper towels to remove excess moisture.
5. Preheat your air fryer to 380°F (193°C). This ensures the eggplant starts cooking immediately for a nice, crispy exterior.
6. Toss the eggplant slices in olive oil and your chosen spices until they are evenly coated.
7. Arrange the slices in a single layer in the air fryer basket. Avoid overcrowding to ensure each piece cooks evenly and gets sufficiently crispy.
8. Cook for about 10-12 minutes. Halfway through, shake the basket or turn the slices to promote even cooking and browning.
9. Check for doneness. The eggplant should be golden and tender. If needed, cook for an additional 2-3 minutes.
