Instructions
1. Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and allow it to heat for about 5 minutes. This ensures a consistent cooking temperature from the start.
2. Prepare the Vegetables: While the air fryer heats, toss the quartered tomatoes, onion, and garlic cloves with olive oil, salt, and pepper. Make sure each piece is lightly but evenly coated.
3. Roast the Vegetables: Place the seasoned vegetables in the air fryer basket. Air fry for 25 minutes, shaking the basket halfway through to ensure even roasting. The vegetables should be tender and slightly charred.
4. Blend the Soup: Transfer the roasted vegetables to a blender. Add balsamic vinegar, vegetable broth, basil, and oregano. Blend until the mixture is smooth. For a thinner soup, you can add more broth as needed.
5. Simmer the Soup: Pour the blended mixture into a soup pot. Bring to a simmer over medium heat and cook for 10 minutes to meld the flavors. Stir occasionally and adjust seasoning to taste.
6. Optional Cream Addition: If using, stir in the heavy cream just before serving for a richer, creamier texture.
