Marinade Ingredients:

  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 stalk lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon oyster sauce (optional for extra depth of flavor)
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil

Pork Chops:

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil

Optional Garnishes:

 
  • Fresh cilantro
  • Lime wedges
  • Sliced red chili

Instructions

1. Tenderize the pork chops: Use a meat mallet to gently tenderize the pork chops. This helps to ensure even cooking and makes the meat more tender.

2. Make small slits: Cut small slits around the edges of the pork chops to prevent curling during cooking. This step is crucial for maintaining the shape and ensuring even cooking.

3. Season lightly: Sprinkle the pork chops with 1 teaspoon of salt and 1 teaspoon of sugar. Rub the seasoning evenly on both sides.

4. Combine ingredients: In a mixing bowl, combine 3 tablespoons of fish sauce, 2 tablespoons of soy sauce, 2 tablespoons of honey, finely chopped lemongrass, minced garlic, 1 tablespoon of vegetable oil, and 1 teaspoon of black pepper. Mix well to create the Vietnamese marinade.

5. Marinate the pork chops: Place the pork chops in the marinade, ensuring they are fully coated. Cover the bowl and let the pork chops marinate in the refrigerator for at least 1 hour, preferably overnight, for optimal flavor.

6. Preheat the air fryer: Set your air fryer to 400°F (200°C) and preheat it for about 5 minutes. This ensures the pork chops start cooking immediately and evenly.

7. Cook the pork chops: Place the marinated pork chops in the air fryer basket in a single layer. Cook at 400°F for 10 minutes.

8. Flip halfway: After 5 minutes, flip the pork chops using tongs to ensure even cooking on both sides. Continue cooking for the remaining 5 minutes.

9. Check for doneness: Ensure the internal temperature reaches 145°F (63°C). This is the safe temperature for pork and guarantees juiciness.

 

10. Rest the pork chops: Let the pork chops rest for a few minutes before serving. This allows the juices to redistribute, making the meat more flavorful.
