Ingredients
- 4 (6 oz) chicken breasts
- 4 slices ham
- 4 slices Swiss cheese
- 2 tablespoons Dijon mustard
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko bread crumbs
- 1/4 cup grated Parmesan cheese (optional, for added flavor)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Cooking spray or olive oil spray
Instructions
1. Tenderize the chicken: Place each chicken breast between plastic wrap. Use a meat mallet to pound them to about 1/4-inch thickness.
2. Season the chicken: Sprinkle both sides with salt, pepper, and garlic powder.
3. Assemble the rolls: Spread 1/2 tablespoon of Dijon mustard on each chicken breast. Layer with a slice of ham and Swiss cheese. Roll up tightly and secure with toothpicks if needed.
4. Prepare the breading: Set up three shallow bowls. Place flour in one, beaten eggs in the second, and a mix of panko bread crumbs and Parmesan cheese in the third.
5. Bread the chicken: Dredge each roll in flour, dip in eggs, and coat with the panko mixture.
6. Preheat air fryer: Set your air fryer to 370°F.
7. Cook the chicken: Spray the air fryer basket with cooking spray. Place the chicken rolls in the basket, making sure they don’t touch. Spray the tops with cooking spray.
8. Air fry: Cook at 370°F for 15-18 minutes, turning halfway. Ensure the internal temperature reaches 165°F.
Notes
Always check the chicken’s internal temperature to ensure it is fully cooked. The best way to do this is with a meat thermometer.
