Instructions
1. Marinate the Chicken: In a bowl, combine sliced chicken, olive oil, garlic powder, salt, and pepper. Mix until the chicken is well-coated. Let it marinate for at least 30 minutes, or overnight in the fridge for enhanced flavor.
2. Prepare the Vegetables: Wash and slice the broccoli, carrots, and bell pepper. Set aside.
3. Preheat your air fryer to 360°F. Place the marinated chicken in the air fryer basket in a single layer. Cook for 10 minutes, then flip the chicken and cook for an additional 5-7 minutes until fully cooked and slightly golden.
4. Combine soy sauce, water, brown sugar, honey, minced garlic, and grated ginger in a small saucepan. Bring to a simmer over medium heat.
5. Stir in the cornstarch and water mixture. Continue to simmer, stirring constantly, until the sauce thickens, about 2-3 minutes. Remove from heat.
6. Spoon cooked rice into bowls. Top with air-fried chicken, prepared vegetables, and drizzle with the thickened teriyaki sauce.
7. Garnish with sesame seeds and green onions for added flavor and crunch.
