Ingredients
- 12 fresh oysters, shucked
- 1 cup of fresh spinach, chopped
- 1/2 cup of Parmesan cheese, grated
- 1/4 cup of breadcrumbs
- 1/4 cup of unsalted butter
- 2 cloves of garlic, minced
- 2 tablespoons of finely chopped shallots
- 2 tablespoons of Pernod or anise-flavored liqueur (optional)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
1. Preheat your air fryer to 400°F (200°C). This ensures it’s hot and ready when you need it.
2. Prepare the spinach mixture: Melt the butter in a small saucepan over medium heat. Add the minced garlic and chopped shallots, and sauté until fragrant, about 2 minutes.
3. Add the chopped spinach and cook until wilted, about 3 minutes. Stir in the Pernod (if using), salt, and pepper. Remove from heat.
4. Shuck the oysters: If you’re shucking the oysters yourself, use an oyster knife to carefully open them. Keep the oyster meat in the half shell and discard the top shell.
5. Top the oysters: Place the oysters on a baking sheet. Spoon the spinach mixture over each oyster. Sprinkle with Parmesan cheese and breadcrumbs.
6. Cook in the air fryer: Carefully transfer the oysters to the air fryer basket. Cook at 400°F for 5-7 minutes, or until the topping is golden and the oysters are cooked through.
7. Serve: Remove from the air fryer and serve immediately with lemon wedges.
