- 4 large chicken breasts, boneless and skinless

Instructions
1. Mix the Stuffing: In a bowl, combine 1/2 cup cream cheese, 1/4 cup each of Parmesan and mozzarella cheeses, 2 cups of chopped fresh spinach, 1 cup of chopped artichoke hearts, 2 minced garlic cloves, and 1 teaspoon of Italian seasoning. Mix well until all ingredients are evenly distributed.
2. Prepare the Chicken: Lay each chicken breast flat on a cutting board. Using a sharp knife, carefully cut a pocket into the thickest part of each breast, ensuring not to cut through completely.
3. Stuff the Chicken: Spoon the mixture into each chicken breast evenly. Secure the opening with a couple of toothpicks to prevent the stuffing from escaping during cooking.
4. Preheat the Air Fryer: Set your air fryer to 375°F. While it heats, lightly brush the chicken with olive oil and season the outside with salt and pepper.
5. Cook the Chicken: Place the stuffed chicken breasts in the air fryer basket. Make sure they are not touching to ensure even cooking. Cook for about 22-25 minutes, or until the chicken reaches an internal temperature of 165°F.
6. Check the Temperature: Halfway through the cooking, flip the chicken breasts. Use a meat thermometer to check the internal temperature toward the end of cooking to ensure it’s reached 165°F safely.
